These antipasto skewers are the ultimate no-recipe recipe—fresh, flavorful, and completely customizable. There’s no exact measuring here—just grab your favorite gluten-free ingredients and build each skewer to your liking. Perfect for entertaining, snacking, or an easy appetizer that looks impressive with minimal effort.

Layer a mix of meats, cheeses, veggies, and olives onto skewers—whatever sounds good, goes. I love to add the gluten free Tortelloni that I find at Whole Foods and Costco. Other favorites are salami, mozzarella balls, cherry tomatoes, olives, artichokes, or cucumbers. I love to pull from marinated jars like mushrooms, artichoke, pickled beets and olives. Repeat your favorites, mix it up, and keep going until you have as many skewers as you need.

Add some dry Italian seasoning if you are in a pinch or use fresh thyme. Finish with a drizzle of balsamic glaze (optional), and serve chilled or at room temperature.

Pro tip: Always double check labels on meats, cheeses, and marinated items to ensure they’re gluten-free and safe from cross contact. My family loves the Paisley Farms jarred items and use them often, but there are several brands out there.

Antipasto Skewers

A quick, no-measure appetizer—just layer your favorite gluten-free meats, cheeses, and veggies onto skewers. Mix, match, and build as many as you need for an easy, crowd-pleasing bite. Pre-marinated items make it easy and delicious!

Ingredients

  • Marinated mushrooms
  • Marinated artichoke hearts
  • Sweet pickled beets
  • Gluten free tortelloni (Taste Republic)
  • Cherry tomatoes
  • Mozzarella balls
  • Olives
  • Salami (sliced and folded)
  • Basil
  • Italian dressing
  • Basil
  • Italian seasoning
  • Optional add-ins or substitutions: cucumber, pepperoncini peppers (stuffed or unstuffed)

Instructions

  1. Cook the gluten free tortelloni and put aside.
  2. Add all the non-jarred or pre-marinated items to a bowl with a splash of Italian dressing and toss.
  3. Mise en place (put together) your ingredients from jars for easy set up.
  4. Put together the skewers with any combo you want but consider flavor profiles (i.e. mozzarella, basil, cherry tomato and salami.
