Taco Salad

I do like a good salad. I can do a plain side salad, but I much prefer a hearty salad. This taco salad is definitely one of those salads you want to eat, and it only takes about 15 minutes to throw together. My husband and I agreed that we could do with eating more salads, for the reasons everyone else eats more salads, overall health. That doesn’t mean life has to be boring. I’m looking forward to showing you some more of my salads that you can be excited to eat.

I love this salad because the salsa is the salad dressing. Trader Joe’s has several fun salsas you can choose from. I went with authentic salsa. A taco salad is typically just your ground meat, beans, corn, shredded cheese, salsa and often some sort of crunch like tortilla strips. I didn’t have crunch this time, but those chili lime rolled corn tortillas from Trader Joe’s are awesome to toss in. You will also see that I made my own taco seasoning. You can absolutely find prepared taco seasoning just double check your labels. They are not all gluten free, particularly the packets. Buyer Beware!

Taco Salad

Taco Salad

All the delicious flavors of a taco — seasoned meat, cheese, salsa, and toppings — served over a crisp bed of lettuce for a fresh, satisfying twist on a classic favorite.

Ingredients

Taco Seasoning
  • 1 tsp garlic salt
  • 1 tsp paprika
  • 1⁄2 tsp cumin
  • 1⁄2 tsp chipotle seasoning (or Cheyenne)
  • 1⁄4 tsp onion powder
  • 1⁄4 tsp oregano
Salad
  • 1 recipe taco seasoning
  • 1 lb. group turkey (lean)
  • 1 can black beans with chiles (drained)
  • 1⁄2 can corn (drained)
  • salsa
  • shredded cheese
  • jalapeños
  • avocado
  • Lettuce

Instructions

  1. Make your taco seasoning by adding all the ingredients together and mixing.
  2. Brown your turkey in a skillet with oil and add your seasoning.
  3. Drain your beans and corn. When the turkey is only slightly pink, add the can of beans and 1/2 the can of corn.
  4. Mix together and cook until the turkey is cooked through.
  5. Add your choice of lettuce to your plate, top with turkey and spoon on salsa.
  6. Add your choice of avocado, jalapeños and shredded cheese. ENJOY!
