      <image:title>Blog - Gluten Free Dallas and East Texas Travel - For a late lunch I googled “gluten free Dallas” and up came On Rotation Brewery, a newer brewery and restaurant with gluten free fried chicken and dedicated fryers. Actually, not only were there dedicated fryers, but all fried food was gluten free! According to our server they use potato flour. I got the fried chicken and fried okra. It was absolutely amazing! It had been 12+ years since I had fried chicken. I asked the server why they decided to go gluten free on the menu. He told me that some family members of the owners are gluten free and they wanted to have options. When traveling they ate somewhere that used potato flour and thought “this is just as good” and decided to take that on in their own restaurant. To drink I had a Bishop cider peach tea, which was made locally. Our server said On Rotation wanted to brew their own cider but it required a separate license than the one used for beer. This may explain by it’s rare to find ciders in breweries, though I’m noticing that these days they carry at least one. They also had some seltzer mixed drinks to choose from. On Rotation is located right near the Dallas Lovefield Airport. After posting on my Instagram story, one of you that lives in Dallas went that week and sent me a message in thanks. It makes me so happy to get messages like this! It means SOMEONE is listening.</image:title>

      <image:title>Blog - Gluten Free Dallas and East Texas Travel - We ate in Dallas before our flight back to Los Angeles as well. We stopped at The Company Café and Bar. The street it was on was filled with other bars and restaurants and looking like it would be a blast at night. There was also a Trader Joe’s right across the street. I tried to talk my in-laws into going in to Trader Joe’s because they don’t have that in east Texas but we had to get moving to catch our flight. Anyway, back to The Company Café. This place is excellent for gluten free and celiac folks. Their fried food is all gluten free, so dedicated fryers. Our server said the only gluten was bread options, tortillas and buns for the non-gluten free folks. This brunch spot even had gluten free biscuits, French toast, sour cream coffee cake, house made gluten free bread and chicken fried steak! You can see in the picture below 3 of our meals: the gluten free chicken strips with fries, gluten free biscuits and gravy and the gluten free chicken fried steak! Everyone was happy. I will admit, my husband who had the biscuits and gravy did say that he could tell it was a gluten free biscuit because it was dense. However, his father had the chicken fried steak and said it was delicious. See guys, gluten free IS good!</image:title>

      <image:title>Blog - Ciabatta Chicken Sandwich - I recently tried the Schar ciabatta rolls and they are amazing! Even my husband commented “they are so soft!”. They make excellent chicken sandwiches. If you can’t find them, then try a gluten free hamburger bun instead. I’ve used Trader Joe’s buns, and they are still excellent! I used my Mediterranean baked chicken but you can bake your chicken however you like. I use a portion of the chicken for the sandwich, usually the end that is less thick. If my chicken breast is really thick then I may cut it more to fit the ciabatta bread how I like. Sandwich toppings are up to your discretion but I spread the Trader Joe’s garlic spread on each side before topping with sliced cheese and broiling until melted. Then I added the chicken, Trader Joe’s chimichurri sauce, avocado, pickled onions and butter lettuce. I’m honestly getting hungry just writing this blog post up and may need to go make myself another sandwich!       <image:title>Blog - Easy Trader Joe’s Shrimp Tacos - These tacos are quick and easy, and all ingredients can be found at Trader Joe’s! I love this recipe because you can whip together Taco Tuesday super-fast and it’s tasty. Quick and tasty might be my life motto. Don’t worry, if you are one of the unfortunate souls that don’t live near a TJ’s, you can find similar ingredients in other local grocery stores. The frozen shrimp is something I pretty much always have in my freezer. I’ve used them for shrimp cocktails, salads and like this post, tacos. They are easy to quickly defrost by running cold water on them. They are already cooked and deveined, so it makes prepping very simple. When cooking, you just want to heat up until warmed and seasoned, as they are already cooked. The Trader Joe’s jalapeño sauce is one of my favorites. It’s always in my fridge, and I often have a spare in the pantry. It’s good on pretty much everything. From burrito bowls to egg white muffins and tacos! Can’t find it? Try guacamole salsa, or salsa verde instead. This recipe uses it for the coleslaw. You can use any coleslaw mix, or even a chopped salad mix. Most coleslaw uses mayo as a base, so if the jalapeño sauce is too spicy for you, cut it with some mayo. You can use Greek yogurt for added protein as well.</image:title>

Like many good dips, it consists of mayo, cream cheese, sour cream and more cheese. Instead of regular cream cheese I used a green chile dip that is sour cream based. I know it’s commonly found in New Mexico and I assume Texas because it appears to be manufactured in Texas. It’s so delicious! If you can’t find it, don’t worry. Use regular sour cream with a bit extra garlic salt, perhaps. Add in whatever seasoning you want. Fresh garlic would be amazing. I will definitely do this next time, but I whipped this together for a game night party when I was already running late. Not only that, I forgot the cream cheese and had to run back to the store! Wondering if it’s actually gluten free? I reached out and they confirmed there are no gluten containing ingredients. They don’t test, which is why there is no label. Read more here.</image:title>

You can also break it up and put in on a salad or in a crustless quiche. I used my leftover meatloaf this time for egg cups. I even added the broccoli. It was great! Otherwise, I meal plan this for the week and serve with a salad or steamed broccoli. I like to add seasoning and often times a slice of cheese, especially for kids or picky eaters. Another tip on the broccoli, they sell bags that you can poke a hole in and microwave for 3-4 minutes until steamed. This cuts out some dishes and time.       <image:title>Blog - Taco Salad - I do like a good salad. I can do a plain side salad, but I much prefer a hearty salad. This taco salad is definitely one of those salads you want to eat, and it only takes about 15 minutes to throw together. My husband and I agreed that we could do with eating more salads, for the reasons everyone else eats more salads, overall health. That doesn’t mean life has to be boring. I’m looking forward to showing you some more of my salads that you can be excited to eat. I love this salad because the salsa is the salad dressing. Trader Joe’s has several fun salsas you can choose from. I went with authentic salsa. A taco salad is typically just your ground meat, beans, corn, shredded cheese, salsa and often some sort of crunch like tortilla strips. I didn’t have crunch this time, but those chili lime rolled corn tortillas from Trader Joe’s are awesome to toss in. You will also see that I made my own taco seasoning. You can absolutely find prepared taco seasoning just double check your labels. They are not all gluten free, particularly the packets. Buyer Beware!</image:title>

Don’t worry, you can make this tasty salad with cooked dry lentils or prepared canned lentils! For me, canned is the way to go. The point of this salad in my mind is something I can toss together quickly. Canned lentils are great to have in your pantry. If you are looking for another lentil recipe, try these vegetarian sloppy sliders. This salad can easily be made vegetarian by omitting the chicken sausage or subbing for cooked mushrooms. It can be made vegan by omitting the cheese or subbing vegan feta or goat cheese crumbles. When I initially posted on Instagram I had a few people ask, “what about the dressing?”. Trust me when I say that I’m a heavy dressing kind of girl. This salad really doesn’t need it, the bruschetta does the trick! But if you really need it, try a Greek dressing.</image:title>

      <image:title>Blog - New Mexican Frito Pie - If you are a person who needs a precise recipe when cooking, this one isn’t for you! But trust me, you don’t need precise because you are going based on taste and this Frito pie tastes so good! Cooking with your soul! I wasn’t even going to put this recipe on my website because I didn’t measure but it’s too good not to. I estimated the measures but really, just go by taste. You can always add more seasoning if it’s too bland! When you add in the chile, unless you like heat I would start small and add in. If you are cooking for someone who doesn’t like spice at all (kids) you can keep the green and red chile on the side and people can self-serve the sauce over their Frito pie. Just make sure to heat it up first. As you probably know, unless you are new here, I’m from New Mexico and recently moved back. I have big love for all things chile, as do most people from the Land of Enchantment. Frito pie was honestly not something I ever ate much growing up, but I have gotten into it since moving back. I order it from 2 of my favorite restaurants in Albuquerque, Duran’s Pharmacy and Church Street Cafe. My best friend makes this a lot, 2-3 times for me since I’ve been back! It’s always delicious and there are so many ways to make it. Vegetarian? Just do beans! I decided to take a stab at it and it’s amazing! I’m going to make this all the time now. The toppings I like are sour cream and cheese, but you can also add chopped lettuce and tomatoes. Let’s talk chile. The state question in New Mexico is: Red or Green? The Answer: Christmas!       <image:title>Blog - Gluten Free Paris - Castle of Versailles: A little bit to prepare you for this visit first, wear tennis shoes. There is a lot of walking involved. We walked at least 10 miles and could have kept going if time permitted. This is really an all-day event. From the castle, to the gardens, and then Marie Antionette’s cottages… there is a lot to look at. The tickets to the gardens are separate from the castle but inexpensive. The lines to Versailles are large to get into the castle, if you can afford it then it’s worth it to pay extra to cut the lines or for a tour guide. There are a couple different restaurant options that I saw. We ate at Angelina. The waiter showed me the allergen menu and there were limited options, maybe 2 dishes and 2 sides. I ordered the salmon fillet which, once served, I noticed the rice didn’t look to be gluten free. I double checked and it was bulgar. When I mentioned it, the manager came over and was in disbelief. “We vetted the menu thoroughly”. After insisting it was not gluten free he googled it himself and informed me that I was correct. Surprise, surprise. I was able to switch my meal to the steak, which was the most expensive item there but was good and I was starving by this point. It came with potatoes that I believe were roasted. My family didn’t like their meals sadly. We got a meringue dessert which also wasn’t very good. I hate to give bad reviews, but I have to be honest. To that point, if you are concerned about food it might be best to hit up NoGlu or another gluten free bakery the morning (or the day before since bakeries tend to open later) and pack yourself a gluten free sandwich.</image:title>

I did get breakfast, an egg-white omelet and some gluten free bread that was tasty. French gluten free bread is much softer!</image:title>

      <image:title>Blog - Gluten Free Paris - Le Lutece: This was around Notre Dame and Shakespeare and Company and was a walk in (meaning I didn’t research before). I showed them my gluten free French saved note and someone brought out an allergen menu and checked the items on the menu for me. You can see the complete list of options on my Paris story highlights on Instagram. I was going to order the sausage but the waiter let me know it was “guts”. That was kind of him! I ordered the steak which was ok. My mom got the chicken with a mushroom sauce which was also listed as gluten free and tasted great! Lastly, I tried escargot for the first time (click the link to see the video of me trying). Tastes like mussels! Full disclosure, I felt sick that night but was fine by morning. It’s possible that the chicken needed to be ordered gluten free, which my mom’s wasn’t, and I did take a bite of. Or, maybe the escargot was too fancy for my stomach. Hehehe.</image:title>

      <image:title>Blog - Gluten Free Paris - Little Nonna: This is an all gluten free pizzeria that it amazing! I got pizza, gnocchi and tiramisu. The pizza was amazing! The pizza crust will have you question if it’s gluten free. The gnocchi were ok and the tiramisu was not good. It was a rough sort of sweet bread topped with ice cream which was the only thing tasty about it. My family got the Crème Brule and said it was good. If you can, make a reservation. We did not and we had to sit outside and it was a bit crisp out.</image:title>

      <image:title>Blog - Gluten Free Paris - NoGlu: This place lives up to the hype! It’s a tiny café that opens at 9am, where many open at 11am in Paris. I got a baguette sandwich which was good but not as satisfying as the gluten free éclair which was amazing! So very good. When I returned, I got quiche, a regular and chocolate croissant, and some sort of chocolate tart. It was heaven. I took a sandwich, and leftovers to-go so that I wouldn’t have to worry about some meals while touring Paris. What I also loved was meeting the other gluten free/celiac folks there. We all exchanged information on where to go, one person recommended Hip Paris for Italian Food. NoGlu is a 10-minute walk to the Musee Rodin (which has a cafe with fruit and wine that we celiacs can eat). It’s also about a 15-minute walk to the Musee de L’Oarangerie which i highly recommend visiting with the audio guide. On the way to the Orangerie we walked over the “love bridge” where lovers place locks on the bridge. Too cute!</image:title>

      <image:title>Blog - Gluten Free Paris - Place De L’Opera: Right across the street from the Opera house and nice shopping is this little cafe. This was another walk in that I showed my French card for dietary needs. They directed to me a few items and I settled on the salmon which was quite good! The waitress spoke English, and she confirmed the fries were cross contamination free. I love French fries! We didn’t make it into the Opera, but we were able to watch some of the French singers outside, though they were mostly English songs.</image:title>

      <image:title>Blog - Ground Breaker Brewing - In 2022 I was able to catch up with the owner and founder, James Neumeister, to learn about his story and the creation of GBB. Like all great ideas, he started brewing beer in his garage in 2009 after a friend was diagnosed with celiac disease. Said friend would bring gluten free beers over and James was shocked at the quality. He took this as an opportunity and a challenge. “I’ll make you a better beer,” James claimed to his friend. James apparently didn’t quite understand the task he was undertaking and quickly realized it wasn’t so simple. But his interest was spiked, and it became a mission. He set out to learn more about celiac disease in order to feel like an expert. Every celiac needs a James in their life! Turns out, James’ wife, Angela, had been dealing with some health issues that included some difficulty with pregnancy. After hearing about the benefits of the gluten free diet, James suggested this to his wife. Pretty soon after going gluten free her health issues cleared up and they are now proud parents of a 12-year-old girl and a 9-year-old boy.</image:title>

      <image:title>Blog - Ground Breaker Brewing - With such a variety of gluten free beers I had to ask about where the inspiration comes from. James really champions his team in this area. Typically, one person will come up with an idea and advocate for what they want to do in house. Then, they get brewing and taste testing in the tap room. Anyone can come get a free 1-2 ounce taste test on anything. Interestingly enough, only 1 of 5 staff members in the brewery has celiac disease, and another has a different set of autoimmune disease. I was curious to know why someone who doesn’t have to be gluten free chooses to be involved in the gluten free brew world. One of their brewers, Tyler Kueber had something to say about that: “The real joy that I get out of making gluten free beer is seeing the look on people’s faces when they come in and try our beer.  Sometimes we’ll have people come in that haven’t even had beer in decades.  It’s not unheard of to see tears of joy in our pub.  I don’t think there are many craft breweries where you can have that sort of experience with your customers.” As a celiac I can certainly relate to getting tearful at gluten free options.</image:title>

      <image:title>Blog - Ground Breaker Brewing - Update: In 2024 I finally made it out to Oregon and was able to visit Ground Breaker Brewing, taste their beers in person and get a little tour! They brew 500 galleons of beer 3 days a week. Since gluten free beer is still fairly new in the last 20 or so years, they are thrilled with the amount of beer they are getting. The process of making the beer is a similar process as gluten beer, but add enzymes, breaking down starches and sugars. Start to finish, the whole process is about 2 weeks. As of 2024, they distribute in 13 states. Sadly, New Mexico is not one of them. I’ve tried. They have year-round beers, seasonal ones and rotate out their fruit beers.</image:title>

I put it on salads, meats, you name it. If you have a Trader Joe’s near you I highly recommend you get this seasoning. If not you can make your own. The below is a picture of the ingredients. You notice I don’t put how much seasoning to use and that is because you need to season with your heart! I stole that phrase from a girl on TikTok I can’t remember. But it’s so true! Many things shouldn’t be measured except by preference. This is one of those recipes where more seasoning is better.</image:title>
